High-Protein Maple & Brown Sugar Snack Muffins

Ingredients

Liquids

  • 2 large eggs
  • 1⁄3 cup of butter (melted)
  • 1⁄3 cup of pure maple syrup
  • 3 teaspoons of vanilla extract
  • 1⁄2 teaspoon of Maple Bakery Emulsion
  • 1 1⁄4 cup of protein milk

Sweeteners

  • 1⁄2 cup of brown sugar (packed)

Dry ingredients

  • 1⁄2 cup of rolled oats
  • 1 scoop of Maple Vanilla Protein Powder
  • 1 1⁄4 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1⁄2 teaspoon of Baking soda
  • 1⁄2 teaspoon of salt
  • 1⁄8 teaspoon of ground cinnamon

Instructions

  1. In a large mixing bowl, beat the eggs.
  2. Add all remaining wet ingredients and mix well.
  3. Add brown sugar and mix.
  4. Add all dry ingredients and mix well until combined.
  5. Batter should be thick but scoopable.
  6. Let batter rest 10-15 minutes for oats and proteins to absorb moisture
  7. Preheat oven to 375°F (190°C) and line a muffin tin.
  8. Fill muffin cups about 3⁄4 full.
  9. Bake for 17–19 minutes, until a toothpick comes out clean.
  10. Let cool for 10 minutes before removing from the pan.

Notes

Flavor note: Maple extract and vanilla are essential to boost sweetness and mask protein aftertaste.
