High-Protein Maple & Brown Sugar Snack Muffins

Ingredients
Liquids
- 2 large eggs
- 1⁄3 cup of butter (melted)
- 1⁄3 cup of pure maple syrup
- 3 teaspoons of vanilla extract
- 1⁄2 teaspoon of Maple Bakery Emulsion
- 1 1⁄4 cup of protein milk
Sweeteners
- 1⁄2 cup of brown sugar (packed)
Dry ingredients
- 1⁄2 cup of rolled oats
- 1 scoop of Maple Vanilla Protein Powder
- 1 1⁄4 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1⁄2 teaspoon of Baking soda
- 1⁄2 teaspoon of salt
- 1⁄8 teaspoon of ground cinnamon
Instructions
- In a large mixing bowl, beat the eggs.
- Add all remaining wet ingredients and mix well.
- Add brown sugar and mix.
- Add all dry ingredients and mix well until combined.
- Batter should be thick but scoopable.
- Let batter rest 10-15 minutes for oats and proteins to absorb moisture
- Preheat oven to 375°F (190°C) and line a muffin tin.
- Fill muffin cups about 3⁄4 full.
- Bake for 17–19 minutes, until a toothpick comes out clean.
- Let cool for 10 minutes before removing from the pan.

Flavor note:
Maple extract and vanilla are essential to boost sweetness and mask protein aftertaste.
