Homemade Sweet & Sour Sauce
Equipment
- Large Cooking Pot
- Whisk
- Small mixing bowl
Ingredients
Liquids
- 4 cups of water
- 3⁄4 cup of white vinegar
- 1 cup pineapple juice
- 1 156 ml can of tomato paste
Sweeteners
- 1 cup of sugar
- 1 250 ml jar of apricot jam
Thickening
- 1⁄2 cup of cornstarch
- 2⁄3 cup of water (for cornstarch slurry)
Dry ingredients
- 1 tablespoon of Dried Red Bell Pepper Flakes
- 1 1⁄2 teaspoons of onion powder
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1⁄4 teaspoon of ground ginger
Instructions
- In a small mixing bowl, whisk together cornstarch slurry
- Dump everything in a large cooking pot, including the slurry
- Whisk until mostly smooth before turning on the heat
- Heat on high, whisking constantly, until sauce starts bubbling and thickens into a glossy sweet and sour sauce
- Simmer for 2-3 minutes, whisking often
Notes
Ingredients note:
If making for a recipe that uses a can of pineapple tidbits preserved with real pineapple juice (like my Golden Sweet & Sour Fried Chicken Bowl), you can reserve the pineapple juice in it and top it up until it makes 1 cup in total, instead of buying pineapple juice solely for this
