Soft Banana Bread

Ingredients
Produce
- 3 very ripe bananas
Liquids
- 2 large eggs
- 1⁄3 cup melted butter
- 1 teaspoon vanilla extract
Dry ingredients
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
Sweeteners
- 3⁄4 cup sugar
Instructions
- Preheat oven to 325°F (165°C) and grease a loaf pan.
- In a large mixing bowl, mash bananas with a fork.
- In a small bowl, beat the eggs.
- Add and mix melted butter, vanilla and eggs in the big bowl.
- Add and mix sugar, baking soda, and salt.
- Add and mix flour.
- Coat loaf tin slightly with spray oil.
- Pour batter into loaf pan and smooth the top with a rubber spatula.
- Bake for 60-70 minutes, until a toothpick comes out clean.
- Let cool in pan for 15 minutes before slicing.
