Soft Banana Bread

Ingredients

Produce

  • 3 very ripe bananas

Liquids

  • 2 large eggs
  • 1⁄3 cup melted butter
  • 1 teaspoon vanilla extract

Dry ingredients

  • 1 1⁄2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1⁄2 teaspoon salt

Sweeteners

  • 3⁄4 cup sugar

Instructions

  1. Preheat oven to 325°F (165°C) and grease a loaf pan.
  2. In a large mixing bowl, mash bananas with a fork.
  3. In a small bowl, beat the eggs.
  4. Add and mix melted butter, vanilla and eggs in the big bowl.
  5. Add and mix sugar, baking soda, and salt.
  6. Add and mix flour.
  7. Coat loaf tin slightly with spray oil.
  8. Pour batter into loaf pan and smooth the top with a rubber spatula.
  9. Bake for 60-70 minutes, until a toothpick comes out clean.
  10. Let cool in pan for 15 minutes before slicing.

Cooking note: Can be baked along with a Soft Honey & Chocolate Tangzhong Loaf for multiple savory options.
