Soft Maple & Brown Sugar Dessert Muffins

Ingredients

Liquids

  • 2 large eggs
  • 1⁄2 cup melted butter
  • 1⁄2 cup pure maple syrup
  • 3 teaspoons vanilla extract
  • 1⁄2 teaspoon Maple Bakery Emulsion
  • 1⁄2 cup milk

Sweeteners

  • 3⁄4 cup brown sugar, packed

Dry ingredients

  • 1 3⁄4 cups all-purpose flour
  • 1 1⁄2 teaspoons baking powder
  • 1⁄2 teaspoon baking soda
  • 1⁄2 teaspoon salt
  • 1⁄8 teaspoon ground cinnamon

Instructions

  1. In a large mixing bowl, crack and beat the eggs.
  2. Add and mix every other wet ingredient.
  3. Add and mix brown sugar and flour.
  4. Add and mix the rest of the ingredients.
  5. Preheat oven to 375°F (190°C) and line a muffin tin.
  6. Fill muffin cups about 3⁄4 full.
  7. Bake for 17–20 minutes, until tops spring back lightly.
  8. Let cool slightly and serve warm.

Notes

Optional finish: Sprinkle a small pinch of brown sugar on top before baking for a bakery-style crust.
