Soft Maple & Brown Sugar Dessert Muffins

Ingredients
Liquids
- 2 large eggs
- 1⁄2 cup melted butter
- 1⁄2 cup pure maple syrup
- 3 teaspoons vanilla extract
- 1⁄2 teaspoon Maple Bakery Emulsion
- 1⁄2 cup milk
Sweeteners
- 3⁄4 cup brown sugar, packed
Dry ingredients
- 1 3⁄4 cups all-purpose flour
- 1 1⁄2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon ground cinnamon
Instructions
- In a large mixing bowl, crack and beat the eggs.
- Add and mix every other wet ingredient.
- Add and mix brown sugar and flour.
- Add and mix the rest of the ingredients.
- Preheat oven to 375°F (190°C) and line a muffin tin.
- Fill muffin cups about 3⁄4 full.
- Bake for 17–20 minutes, until tops spring back lightly.
- Let cool slightly and serve warm.
Notes
Optional finish:
Sprinkle a small pinch of brown sugar on top before baking for a bakery-style crust.
