Molasses Cake

Ingredients
Liquids
- 1 cup molasses
- 1 cup vegetable oil
- 3 large eggs
- 1 cup boiling water
Dry ingredients
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
Instructions
- Preheat oven to 325°F (175°C) and grease a large baking dish.
- In a large mixing bowl, beat the eggs.
- Take 1 cup of boiling water from the kettle and mix in baking soda until dissolved. Wait for at least 5 mminutes before putting it in the batter, otherwise eggs might cook.
- Into the large mixing bowl containing the eggs, mix in sugar, ginger, cinnamon, cloves, molasses, vegetable oil using spatula until well combined.
- Mix in water mixture until fully incorporated.
- Mix in flour until just combined.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

Serving note:
Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
