Molasses Cake

Ingredients

Liquids

  • 1 cup molasses
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 cup warm water

Dry ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves

Instructions

  1. Preheat oven to 325°F (165°C) and grease a medium-large baking dish.
  2. In a large mixing bowl, beat the eggs.
  3. Mix in molasses, vegetable oil and warm water using a spatula until well combined.
  4. In a medium mixing bowl, mix flour, sugar, baking soda, ginger, cinnamon and cloves together.
  5. Add dry ingredients into the large bowl and stir until just combined.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Preparation note: Make sure the warm water is bath-water warm; too hot could shock the eggs, while too cold will not soften the molasses as easily.
Serving note: Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
