Molasses Cake

Ingredients

Liquids

  • 1 cup molasses
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 cup boiling water

Dry ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves

Instructions

  1. Preheat oven to 325°F (175°C) and grease a large baking dish.
  2. In a large mixing bowl, beat the eggs.
  3. Take 1 cup of boiling water from the kettle and mix in baking soda until dissolved. Wait for at least 5 mminutes before putting it in the batter, otherwise eggs might cook.
  4. Into the large mixing bowl containing the eggs, mix in sugar, ginger, cinnamon, cloves, molasses, vegetable oil using spatula until well combined.
  5. Mix in water mixture until fully incorporated.
  6. Mix in flour until just combined.
  7. Pour the batter into the prepared baking dish and spread it evenly.
  8. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Serving note: Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
